Veggie Bake

Liza sent me a list of recipe's last week that are awesome.  I am going to get the ball rolling with those!


One red onion, sliced in thick strips
Two medium Zuchinni, cut in medium slices
Two yellow squash, cut in medium slices
3 Large portobello mushrooms, cut in thick strips
Crumbled Feta to taste
Olive oil- enough to coat
Balsamic vinegar- enough to coat
Cracked black pepper-
Pinch oregano

Combine all ingredients in a casserole dish (except for the feta), let the veggies and all marinate for 30 minutes. Then bake on 375 for about 20-30 minutes, when veggies are soft but not done, add sprinkles of feta to melt over the veggies.
